Vegan Gluten Free Chickpea Pancake



Vegan Gluten Free Chickpea Pancake

Super healthy and delicious

Ingredients:

1/2 Onion
1 Yellow bell pepper
1 Red bell pepper
Thumb sized ginger
Handful of coriander
3 cloves of garlic
Salt as per your liking
1 tsp of black pepper
1 tsp of crushed red pepper
3 small green chillies
1 and a 1/2 cup of Chickpea flour
1 cup of water
3 tbsp of olive or coconut oil

Directions:
  1. In a bowl, pour chickpea flour and slowly add water while mixing the batter. The consistency should be runny. Not too thick or thin. 
  2. Then add all the other ingredients.
  3. Turn the stove on to medium heat and when the non stick pan is hot, pour a drop of olive or coconut oil
  4. With a big spoon pour the batter into the non stick pan and spread it to the size you want.
  5. When the edges begin to turn brown, flip it
  6. Lift it off of the pan into a plate
  7. Garnish it with coriander and serve this deliciousness with organic ketchup or chutney
